The history of Cubzac is closely linked to that of Café de Paris, a shared heritage that we cherish. Since ancient times, the town of Cubzac, cradle of our wineries, has witnessed many significant events, from Neolithic caves to medieval sieges. Personalities such as Camille Jullian and the 4 Fils Aymon have left their mark here.

Cubzac quarries

Witnesses to the Café de Paris legacy

The Café de Paris production site is unique. The brand’s cellars were built in the limestone quarries of the town of Cubzac. They provided the precious limestone that contributed to the construction of emblematic monuments in the region, such as Bordeaux’s Château Trompette. Since they were first exploited in 1562, these quarries have played an essential role in the creation of our sparkling wine.
